Who said that Mediterranean diet recipes are boring? not in our home

Mediterranean diet recipes are the answer to the bland reputation of diet foods. My wife and I try to be creative and find ways to make our food taste good. Wine, low sodium soy sauce, black pepper, lemon, garlic, and onions are just a few of the ways we spice up our cooking.

Whole-grain foods

Mediterranean cuisine as a whole includes lots of fresh and dried spices in its cooking. Combine this with fresh ingredients and you have the most exciting recipes. The use of fresh whole foods is important to us. We prefer to eliminate all processed, colored, flavored and preserved foods from our diets and therefore put fewer chemicals in our bodies.

My research has led me to believe that all the processes that food goes through modify and even destroy its molecular structure. It simply means that some or most of the nutrients, vitamins and minerals that these foods naturally possess are lost.

salads

My wife does most of the cooking. However, I also like to cook and prepare a meal several times a week. My specialty is salads. I love experimenting with new combinations. I add ingredients to salads that you wouldn’t like to add like: parsley, pine nuts, kohlrabi, red radishes, sunflower seeds, and pumpkin seeds. Sometimes we prepare it by adding strips of chicken breast, tuna or salmon.

soups

We love soups, especially during the winter when we want to warm up. Sometimes the soup becomes a meal on its own, like our Chicken Bean Soup. We combine it with a salad, a few slices of black bread and hummus or sesame sauce to spread or dip the bread.

Main courses

The main courses are my wife’s speciality. She mainly makes dishes that are simple and easy to prepare. she cooks chicken and fish in a variety of ways. Chicken and fish are our main sources of meat, and we eat either several times a week. We eat beef once in a while, maybe once or twice a month. Other entrees include: lasagna, casseroles, stir-fries with or without chicken, pizza, pasta, quiche, and shakshuka (egg and tomato dish – yummy!).

Fittings

Our side dish recipes include a variety of grains. Brown and wild rice cooked in different ways including our rice and lentil dish. Other grains include: kasha, quinoa, barley, millet, wheat, and buckwheat. We also like steamed and baked vegetables, garlic bread, mashed potatoes, and baked potato wedges.

Our collection of recipes continues to grow because we are explorers by nature, and perhaps one of these days we will have our own recipe book with all the recipes of the Mediterranean diet.
